Recipe of
the month
Red Onion
Chutney
1 large
stainless steel pan
1 bottle of red
wine or cheap bottle
15 medium/large
red onions
2 good handfuls
of demerara sugar (150/200g)
50ml of malt
vinegar
Method
Slice red
onions, add red wine, vinegar and sugar and cook over a medium/high heat for
45 minutes/1 hour. Keep stirring during this time until red wine has reduced
and sugar has caramelized the onions.
